Vegetable Jalfrezi

Serves 4
Ingredients:
- 3 cups assorted mixed vegetable of choice ( cauliflower, carrots, beans, zucchini, bell pepper, peas, baby corns)
- Paneer cubes 1/3 cup optional
- 3 tablespoons Oil
- 1/2 teaspoon Cumin seeds
- 1 Green Chili
- 1 teaspoon Ginger-Garlic paste
- 1 medium Onion diced
- 1/2 cup Tomato Puree or 3 tbsp tomato paste
- 1 teaspoon Red Chilli powder
- 1/2 teaspoon Turmeric or Haldi powder
- 1/8 teaspoon ground Nutmeg
- 1 teaspoons Salt
- 1/2 teaspoon Garam masala
- 1 tablespoons Kasuri Methi, dry roasted and crushed (optional)
- Fresh Coriander, chopped
