Week 1. Thai basil chicken (Thai Cuisine)
Week 2. Kerala chicken stew (Indian cuisine)
Week 3. Black bean burgers (Mexican cuisine)
Week 4. Burmese khao suey (Burmese cuisine)
Burmese Khao Suey
Ingredients Required:
For the khao suey broth+noodles:
- 1 red onion
- Coconut milk
- 1 stalk of lemon grass
- Frozen mixed veggies/ chopped mixed veggies of choice – zucchini, broccoli, mushrooms, peas, carrots, cauliflower, etc – 1 cup
- Fresh ginger and garlic – finely grated
- Spices – turmeric, salt, sugar, coriander and cumin powders
- Noodles of choice – (egg noodles, rice noodles or even spaghetti works)
- oil
For the toppings:
- Oil for frying in a small pan.
- Ingredients to be fried: Sliced onions, Sliced/ chopped garlic, Noodles, Peanuts
- Green onions – chopped
- Cilantro
- Sliced green chillies – serrano or jalapenos or thai birds
